Outback's Alice Springs Chicken

Image
This is not a health food recipe, but it is mighty tasty. Everything in moderation, right? I found this recipe for Alice Springs Chicken on Pinterest . I've forgotten on which blog it was posted. Whomever developed it did well as it tastes good and has clear directions. The amounts of ingredients seem correct. I've never ordered the Alice Springs Chicken at Outback Steakhouse so I don't know how this compares, but it is delicious in its own right. OUTBACK’S ALICE SPRINGS CHICKEN 4 boneless skinless chicken bre asts, pounded to 1/2 inch thickness Lawry's Seasoning Salt 6 bacon slices 1/4 cup regular mustard 1/3 cup honey 2 Tbsp. Mayonnaise 2 teaspoons dried onion flakes 1 cup sliced fresh mushroom (I omitted because my family does not like mushrooms) 2 cup shredded Colby/Jack cheese   First, sprinkle and rub the chicken breasts with seasoning salt. Cover and refrigerate for 30 minutes. While the chicken is in the refrigerator, cook bacon in...

Two ways with Beef Stroganoff

Soon after we moved into our house in 1999, my mother-in-law gave me a battered copy of "The New Good Housekeeping Cookbook" that she found at a yard sale. I learned to make Beef Stroganoff from it. But that version is decidedly not healthful at 580 calories per 1/6th of the recipe. I'm including it here to preserve it but also because a little splurge now and then on "the real thing" is not bad. But recently, thanks to Pinterest, I found a lighter version with the same flavors of Beef Stroganoff. It's calculated for Weight Watchers and streamlined for quick preparation as a casserole. I have http://www.laaloosh.com/ to thank for it. BEEF STROGANOFF 1 1/2 pounds beef tenderloin butter or margarine 1 large onion, minced 1/2 pound mushrooms, sliced 2 teaspoons dry mustard 1 teaspoon salt beef broth 1 tablespoon all-purpose flour 1/2 cup sour cream I wrote a note in the cookbook: Stir-fry the steak, chop and measure ingredients and cook noodles before you ...

Evil Jr.: Cupcake Sliders

Image
I have a board on Pinterest titled "Pure Evil Food." It contains the most decadent, nutritionally void recipes I find to separate them from recipes with average or exceptional nutritional value. Whenever I make and share one of these recipes, my friends gush and also tease me about being evil. My 9-year-old daughter is in the running for the Evil title. One night this week when she had no homework and no extracurricular activities, she looked through a cookbook and found a recipe for from-scratch Cupcake Sliders. There's a whole stick of butter in the batter. She made them with only a little help from me. And though she is still learning how to follow directions to the letter, they still turned out just fine. You can fill them with Nutella or another chocolate-hazelnut spread or canned or homemade chocolate frosting. We used Nutella. I apologize for not taking photos of her creative process. I was making pumpkin chili at the same time. CUPCAKE SLIDERS 2 cups ...

Recipe Keeping: The Cloud's the Limit

When I was in my middle-school home economics class, we got recipe boxes. I was so excited to fill mine like my mom's and grandma's. When I started seriously cooking as an adult, it was obvious a box wasn't going to cut it. For a while, I printed recipes from the computer or tore out magazine pages and slipped the papers into page protectors and stored them in binders on a bookshelf in my kitchen. That worked to keep the recipes clean while cooking and all in one place. But I got busy (lazy) and started just stuffing recipes in there out of order or just keeping whole magazines. It wasn't very organized and more than once I bought the ingredients to make something and couldn't find the recipe! Frustrating! When I got really busy, I would stash the magazines I got from gift subscriptions in tote bags, boxes and shelves until I had a chance to read them. There might be something in there that I needed! Well, three people and two dogs live in this little house and thes...
